- Hours by hand per day = dough balls a day × seconds per ball ÷ 3,600
- Machine hours per day = dough balls per day ÷ hourly output of the machine (EL300: 2,500 dough balls an hour, manufacturer’s figure; EL300 PLUS and EL1000 with the same value, the most cautious one; ERT300: about 800 an hour with 250 g pieces)
- ERT300: by hand you also weigh and cut, so the calculation starts from 25 s per dough ball (you can change it)
- Hours freed up per month = (hours by hand − machine hours) × opening days
- Value of the time freed up = hours freed up × hourly staff cost
- Payback months = machine price ÷ monthly value, only for the EL300, which has a public price; value over 3 years = monthly value × 36, minus the price where it is public
It does not include transport, maintenance, energy, loading and cleaning time: it is an estimate to guide you, to be checked against your kitchen's real numbers.
