Buying guide

How to choose the right dough rounder.

How do I choose a pizza dough rounder?

Start from three things: the weight of your dough balls, how many you make on a full day, and whether you want to divide the dough by hand or by machine. For dough balls from 30 to 300 g there is the EL300 dough ball rounder; if you work different doughs on the same day, the EL300 PLUS has an 18-speed touchscreen and an inverter; for bread and pieces up to 1 kg there is the EL1000; if you want the machine to portion the dough as well, there is the ERT300.

Which machine for 250 g pizza dough balls?

250 g is within the range of the EL300 (30–300 g), the EL1000 (50 g – 1 kg) and the ERT300 (50–300 g). In a pizzeria the most common choice is the EL300; the ERT300 if you also want to portion by machine; the EL1000 if you also make bread and loaves.

What is a dough divider, and when do you need one?

When dividing the dough by hand, piece by piece with scales and a knife, takes up too much of your time. In the ERT300 the RT300 divider portions the dough block from 50 to 300 g and the EL300 below rounds the pieces into balls: about 800 an hour with 250 g pieces. The divider works doughs from 55 to 60 % hydration.

What is the difference between the EL300 and the EL1000?

The weight range: the EL300 goes from 30 to 300 g and is designed for pizzerias; the EL1000 goes from 50 g to 1 kg, for those who also make bread, loaves and rolls or produce for several outlets. The EL300 works doughs from 55 to 80 % hydration, the EL1000 from 55 to 75 %. Both run on 230 V single-phase as standard.

How do you portion and ball pizza dough with a machine?

There are two steps: dividing the dough into pieces of the same weight and closing them into balls. By hand, the pizza maker does both. With the EL300 you portion and the machine rounds the balls; with the ERT300 the machine does both.

How do I choose based on how many dough balls I make a day?

Count the dough balls of a full day. The EL300 makes over 2,500 pieces an hour, the EL1000 from 2,500 to 3,000, the ERT300 about 800 an hour with 250 g pieces, but it also portions. With the savings calculator you can see how many hours a month you free up compared with working by hand.

How much does a commercial dough rounder cost?

The EL300 costs €2,250 + VAT and can be ordered online on the ELIANI Store. The EL300 PLUS, EL1000 and ERT300 are priced on request: we prepare a written offer for your configuration and delivery country.
